My mom decided to share a recipe with me that she found on Food.com because she said it was really yummy. I think it actually sounds really good and I might try it myself this weekend. Where else are you going to get a nice piece of Pecan Pie for just 4 Carbs?

Making the crust

Almond Crust

11 Carbs whole shell
  • 1.5 Cups almond meal or almond flour
  • 3 Tablespoons melted butter
  • Artificialsweetner equal to 3 tablespoons sugar

In pie pan pour almond flour and sweeterner and stir, add melted butter and finger press to pie pan.

Making the filling

Filling

  • 3 Beaten eggs
  • 1 cup Splenda or Stevia
  • 1 tsp vanilla
  • 2 tblsp melted butter
  • 1 cup sugar free maple syrup or Mrs Butterworth’s Sugar free
  • 1.5 cups of pecans

Beat eggs and Splenda , add vanilla, butter & syrup. Visit Mrs. Butterworth’s Facebook page at www.facebook.com/MrsButterworths, select the green spring bottle design and type in the secret code: 79129–13G for a fun surprise for you kids.*

Then add nuts. Pour into unbaked almond crust and bake at 350 for 45 minutes. This is NOT a sponsored post.

Thank you very much for this recipe, at last i found a decent low carb, diabetic friendly pecan pie recipe that i searched for so long. Thank you or this recipe i can bake my sugar free pecan pie for my aunt who loves pecan pie but unfortunately can’t eat one because she is diabetic.

I will make one of this tonight to surprise my aunt, i know she’ll be very happy with it now that she can actually eat one again after 5 years. I’m really glad about it.

This recipe looks and smells (it’s in the oven now) wonderful! You show the nutritional info, but I don’t see the number of servings. Will you tell me how many servings on which you based the carb count? Thanks!

FAQs

Is it better to use light or dark Karo syrup for pecan pie? ›

Light and dark corn syrup can be used interchangeably in almost every instance, with slight flavor variances. In a pecan pie, for example, light corn syrup will contribute sweetness and a hint of vanilla, but that's about it. Dark corn syrup, in addition to sweetness, will add color and a more robust, toasty flavor.

Is pecan pie high in carbs? ›

Pecan pie (1 piece - single crust - 1/8 of 9" pie) contains 63.8g total carbs, 61.9g net carbs, 29.9g fat, 5.4g protein, and 527 calories.

What is a substitute for Karo syrup in pecan pie? ›

For every one cup of corn syrup that the recipe calls for, use one cup of maple syrup instead. The great thing about maple syrup is it has some nutritional benefits. Maple syrup contains antioxidants, vitamins, and minerals, such as Vitamin B6, calcium, niacin, potassium, and riboflavin.

How many pecans can I eat on keto? ›

With carb restriction of about 20-50g per day, adding pecans to your keto diet is a good idea, since you'll get 1g of net carbs if you eat about 19 halves of pecan nuts. The nuts also have about 70% fats, which is an excellent addition in achieving ketosis.

Is pecan pie bad for blood pressure? ›

Pecan offers proteins, fibers, and healthy fats that keep you satisfied and energetic. They are also a great source of magnesium, potassium, and calcium, which help to lower blood pressure.

Are pecans good on a low carb diet? ›

CARB CONSCIOUS: Pecans are naturally low in carbohydrates… always have been, always will be. In fact, a handful of pecans (one ounce of pecans) contains only 4 grams of carbohydrates! That means that nutrient-dense pecans can add flavor, nutrition and disease-fighting properties to any diet that limits carbs.

Which is better light or dark Karo syrup? ›

Typically, light corn syrup is used when a delicately sweet flavor is desired, such as in fruit sauces and jams. Karo light corn syrup is made with real vanilla. Dark corn syrup is made with refiners' syrup, a type of molasses. With its more robust flavor and color, it is ideal for many baked goods.

Why is my Karo pecan pie runny? ›

A pecan pie is essentially a custard pie, and a liquid center is almost always the result of underbaking. The Karo Classic Pecan Pie recipe calls for baking the pie for 60 to 70 minutes at 350 degrees. In some ovens, however, the pie can take 75 minutes or more.

Is light or dark brown sugar better for pie? ›

Again, if you use dark brown sugar, you will find a stronger flavor and the higher acidity will impact the rise, causing a higher rise or wider spread. That being said, if the recipe only calls for a small amount of brown sugar, it may not impact the final product.

How do I substitute light corn syrup for dark corn syrup? ›

All you need to do is add 1/4 cup of molasses to 3/4 cup of your light syrup. This helps the syrup keep the same consistency and gives it that robust flavor of dark syrup. No molasses? You could also dissolve brown sugar in water on the stovetop until it forms a syrup.
