This Easy Pineapple Salsa Recipe is the perfect topping for grilled chicken, fish tacos or scooping with your favorite chips! Just add all the ingredients to a bowl and let the magic begin.
Since this recipe shares several ingredients (red onion, tomatoes, and cilantro) with Simple Guacamole Dip, I often make both recipes at the same time. It's best to eat the guacamole fairly quickly so it won't turn brown.
But pineapple salsa gets better while it sits, as in make extra for the next day so you have leftovers! We have lots of ideas for how you can use it!
For example, spoon it over Baked Lemon Pepper Chicken or Lemony Baked Basa. It's a healthy and festive way to dress up dinner!
Plan ahead and set some aside. Otherwise, it will definitely disappear!

Ingredients and Variations
Prepare the following ingredients and mix them together in a bowl. That's it!
- Dice Pineapple - we buy pineapple with the outer skin removed and dice the rings. Check out How to Cut a Pineappleto prepare a whole one. Use canned pineapple chunks in the off-season.
- Dice Red Onion - the red variety has a mild flavor and just happens to add a bit of purple color too. White and green onions are options too!
- Remove seeds and dice Plum Tomatoes - my favorite tomato because it's so easy to prep but you can use any kind or none at all.
- Dice Red Pepper - the sweetest of the peppers. Add green and yellow for even more color.
- Chop Cilantro - pull clean cilantro leaves from stem and place them in a small container. Use scissors to snip.
Want to make it spicy? Add some finely diced jalapeno peppers! You can also add in additional fruits like mango, peaches, or even cucumber.
Salsa is one of those recipes where the ingredients and amounts can easily be adjusted to taste. For example, I often leave out the red pepper and add extra tomato instead.
We add a squeeze of fresh lime juice to get things started, but you don't have to. The juice from the pineapple will blend the ingredients together over time. You can also use lemon juice to kick start the process.
Allow the mixture to sit and the ingredients to mingle for about 15 minutes for the very best pineapple salsa.
What goes with Pineapple Salsa?
This pineapple salsa is definitely not just for chips! Here are some more ideas of what to serve it with:
- Top baked or grilled chicken, fish, shrimp or pork before or after cooking.
- Add it to fish tacos. It's perfect with Blackened Cod.
- Serve with Mexican dishes including nachos or quesadillas.
- Mix it into cooked rice, quinoa, or other grain to make a tropical side dish.
- Mix it with shredded cabbage to make a fruity coleslaw.
- Add it to a Shrimp Poke Bowl
- Serve it with ham.
- Add it to pizza or make Hawaiian Pizza Quesadillas!
- Snack on it with a spoon, no chips necessary!
- Scoop it with Low-Carb Tortilla Chips
- Mix it with another recipe like Fresh Corn and Black Bean Salsa for a taste explosion!

How long does pineapple salsa last?
Stored in an airtight container in the refrigerator, pineapple salsa will be good for up to 5 days. The length of time varies depending upon the freshness of the ingredients when it was made.
Is pineapple keto?
No. Pineapple is not keto-friendly because it is high in sugar and carbohydrates. Add it sparingly to dishes to get a pop of flavor.
What can you do if the pineapple is not sweet?
Pineapple served at room temperature or slightly warmed will taste a little better. As the salsa ingredients mingle together the overall taste improves as well. Finally, you can always add a pinch of sugar or a little honey to sweeten the final dish.
Party Idea
Make a pineapple bowl or "boat" with the pineapple halves and serve salsa, or whatever you turn it into, right out of the hollowed out skin. It's a guaranteed show-stopper!

Ingredients
- 2 cups pineapple cut into cubes
- ½ cup plum tomato diced
- ½ cup red pepper diced
- ½ cup red onion diced
- ¼ cup cilantro chopped
- 1 teaspoon lime juice
Instructions
Combine all of the ingredients in a large bowl. Allow ingredients to mingle for about 15 minutes for the best result.

- Salsa can be made a day ahead of time and stored in the refrigerator in airtight container up to 5 days. The flavors mingle and still taste wonderful the next day.
- Some ways to use pineapple salsa include:
- Top chicken (like Baked Lemon Pepper Chicken)
- Over fish or make tacos - make Lemon Pepper Tilapia. Stir some slaw mix into the salsa and drizzle with aioli (¼ cup mayonnaise, 1 garlic clove, 1 Tablespoon lemon juice, pinch paprika)
- With cooked ham
- Toss with cooked shrimp and serve over rice (including cauliflower rice)

I can think of a lot of different dishes that would be great with this salsa. Sometimes a sweeter salsa is perfect with pork and I have a fish recipe that the salsa would really enhance.Reply
